If someone not only can't stop something, but doesn't make adjustments to do so

I usually mix it up as much as possible because I don't want to be "the guy" who just spams the same old cheese on every play. However, after running the same Man Blitz twice, I noticed that my opponent threw to the exact same covered route twice in a row. It was already 14-0, so I decided I'm going to keep running that same play on Defense until my opponent shows even the slightest adjustment to counter it. They never did. They never ran the ball, didn't check down, they just took a sack or threw deep to have it knocked away or picked off. After the 3rd interception and a 28-0 game they finally conceded. What would a coach do IRL if someone was getting blown up every play by the same concept and did nothing to counter it?
