I think the idea is, at least in previous years, certain blocking animations trigger at certain thresholds with the straight pass/run block rankings. (last year it was 89 for run block). which does help the block. The power/finesse rankings are used to calculate matchup results. Defensively, those ratings are the amount of time it takes to complete the move, the blocking rating how effective the move will be/how well they block it. Realistically, who the hell knows.
As others have mentioned evidence is run block power and finesse aren't actually used in the game.
I have a theory that regular Pass Block is used for running back pass blocking, but no where else.

From what I understand. PBK doesn't matter at all only PBF an PBP do. The opposite is true for RBK. RBF and RBP mean nothing.
Pass Block and Run Block?
Great question. I’m guessing For wins and losses at line, block shedding is counter to pbk and rbk, finesse to fitness, and power to power.

What’s the point if those ratings when we have power and finesse blocking?
